South of the Border Veggie TostadasGrilled vegetables and refried beans top a crispy tostada shell that is garnished with shredded lettuce, pico de gallo, and chili-seasoned Upstate Farms® Greek Nonfat Plain Yogurt.
1 3/4 cups Upstate Farms® Greek Nonfat Plain Yogurt
2 tbsp. chili powder
1 lime, juice and zest
10 tostada shells
1 1/4 cups refried beans, warmed
1 zucchini, sliced lengthwise and grilled
1 yellow squash, sliced lengthwise and grilled
1 red bell pepper, quartered, grilled and cut into bite size pieces
1 1/4 cups shredded iceberg lettuce
1 1/4 cups pico de gallo
1. Mix Upstate Farms® Greek Nonfat Plain Yogurt with chili powder and lime juice.
2. Top each tostada with refried beans and vegetables.
3. Garnish each with lettuce, pico de gallo and dollop of the chili yogurt.
