Chicken Salad Sandwich

Whole wheat bread is piled high with chicken salad that’s full of fresh vegetables, roasted chicken and Upstate Farms® Greek Nonfat Plain Yogurt.

Serves: 50

Ingredients

12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt

1/4 cup. dijon mustard

2 tbsp. black pepper, ground

3 tbsp. salt

1/4 cup parsley, dry

1/4 cup chives, dry

1/4 cup lemon juice

10 lbs. chicken, frozen, diced, thawed and drained  

1/2 lb. onion, IQF, diced, thawed and drained  

1/2 lb. celery, IQF, diced, thawed and drained  

100 slices whole wheat bread  

Directions

1. In a large bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt with Dijon mustard, black pepper, salt, parsley, chives and lemon juice. Stir to combine.

2. Add in the remaining ingredients and fold with a spatula to combine.

3. To serve, spoon 1 cup of chicken salad between two slices of wheat bread.
