Chicken & Rice Soup

Roasted chicken, fresh vegetables and brown rice are served in a creamy chicken broth fortified with Upstate Farms® Nonfat Plain Yogurt.

12 1/2 lbs. Upstate Farms® Nonfat Plain Yogurt

2 gal. unsalted chicken broth

2 cups onions, frozen, diced  

1 cup carrots, frozen, diced  

1 cup celery, frozen diced  

1/4 cup parsley flakes, dried

1 tbsp. onion powder

1 tbsp. garlic powder

1 tbsp. salt

3 lbs. brown rice  

5 lbs. chicken, cooked, diced


1. In a large pot or steam kettle, combine chicken broth, vegetables, herbs and spices.

2. Bring to a boil, reduce heat and simmer for 10 minutes.

3. Add rice and chicken. Return to a simmer, cover and cook for 20 minutes or until rice is tender.

4. Stir in yogurt and return to a simmer. Serve.
