Crispy Cod with Creamy Chimichurri

Flaky cod is lightly floured and pan-fried, then served with Upstate Farms® Sour Cream infused with cilantro, mint, garlic, parsley, and chili flakes for a real taste of Madrid.  

Serves: 10


2 cups Upstate Farms® Sour Cream
1 bunch cilantro, chopped
8 leaves fresh mint
1/2 cup garlic, minced
1 bunch parsley, chopped
2 tbsp. chili flakes
1 cup canola oil
10 8 oz. cod filets
3 cups all-purpose flour
Salt and pepper, to taste


1. In a blender, combine Upstate Farms® Sour Cream, cilantro, mint, garlic, parsley, and chili flakes and blend until smooth. Season with salt and pepper, and set aside in fridge to keep cool.
2. In a large cast iron skillet, heat oil.
3. In a mixing bowl, flour each piece of cod, shaking off excess. Fry in oil until each side is golden brown. Serve with chimichurri sauce on the side or lightly drizzled atop of cod.
