Creamy Potato SaladThis classic side dish is given a boost of protein and nutrients with Upstate Farms® Greek Nonfat Plain Yogurt, carrots, onions and celery.
12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
1 cup Dijon mustard
1/4 cup Salt
3 tbsp. Black pepper, ground
1/2 cup Parsley, dried
1/2 lb. Onion, frozen, diced, thawed and drained
1/2 lb. Celery, frozen, diced, thawed and drained
15 1/2 lbs. Potatoes, frozen, pre-cooked, thawed
1. In a large bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt with Dijon mustard, black pepper, salt and parsley. Stir to combine.
2. Add the remaining ingredients and mix well until evenly distributed.
3. To serve, portion 1 cup of potato salad into a bowl.
