Coconut Rice Bowl

Brown rice is cooked with sweet coconut milk and topped with Upstate Farms® Greek Nonfat Plain Yogurt. The bowls are then topped with sautéed peppers, onions and steamed green beans.

12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt  

1 lb. bell peppers, frozen, diced, thawed  

1 lb. onion, frozen, diced, thawed

2 lbs. green beans, frozen, cooked and drained  

3 lbs. instant brown rice, dry  

3 cups coconut milk

3 cups water


1. In a large pan or tilt skillet, cook bell pepper, onion and green beans until soft. Add rice, coconut milk and water. Bring to a boil, then simmer for 10 minutes or until rice is cooked.

2. To serve, fill a bowl with 1 cup of the rice and vegetable mixture and top with 1/4 cup Upstate Farms® Greek Nonfat Plain Yogurt.
