Black Bean Burrito Bowl
A savory parfait is layered with southwest-seasoned Upstate Farms® Greek Nonfat Plain Yogurt, black beans, steamed brown rice and shredded lettuce. For extra flavor, it all gets topped with spicy salsa.Serves: 50
Ingredients
12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
1/4 cup southwest seasoning, divided
3 lbs. instant brown rice, dry
7 lbs. black beans, canned, drained
6 cups water
1/2 lb. lettuce, shredded
6 cups salsa
Directions
1. In a large bowl, combine 2 tbsp. of southwest seasoning and Upstate Farms® Greek Nonfat Plain Yogurt. Keep cool until ready to serve.
2. In a large pot, combine the remaining 2 tbsp. of southwest seasoning, brown rice, black beans and water. Bring to a boil and reduce to a simmer, covered for 10 minutes or until brown rice is cooked and beans are tender.
3. To serve, fill a bowl with 3/4 cup rice mixture and top with 1/4 cup shredded lettuce, 2 tbsp. salsa and 1/4 cup Greek yogurt.
