Wild Atlantic salmon is smoked and then sliced thin atop roasted fennel, mixed greens, and radish, drizzled with an Upstate Farms® Sour Cream and red wine vinegar dressing.Serves: 4
1 1/2 cups Upstate Farms® Sour Cream
4 tbsp. red wine vinegar
8 cups mixed greens
2 cups thinly sliced fennel, roasted
1 cup radish, diced
16 oz. smoked salmon
Salt and pepper, to taste
1. In a large mixing bowl, whisk together Upstate Farms® Sour Cream and red wine vinegar. Season with salt and pepper, to taste.
2. Portion out mixed greens onto plates and top with fennel, radish, and smoked salmon. Drizzle with sour cream dressing.
