Travel the Mediterranean coast with lemon seasoned farro, fresh arugula, tomato relish, grilled chicken, and feta infused Upstate Farms® Greek Nonfat Plain Yogurt, spread on a fresh tortilla.Serves: 10
1 cup Upstate Farms® Greek Nonfat Plain Yogurt
1 cup crumbled feta cheese
2 tbsp. olive oil
2 cups cooked farro
3 tbsp. lemon juice
1 1/2 cups pico de gallo
1/2 cup chopped olives
10 flour tortillas
3 cups fresh arugula
10 4 oz. cooked chicken breasts, sliced into quarters
1. In a food processor, blend Upstate Farms® Greek Nonfat Plain Yogurt with the feta and olive oil.
2. Season the farro with lemon juice.
3. Mix the pico de gallo with the olives.
4. To build: spread the yogurt feta blend on the tortilla, top with farro, arugula, chicken, and tomato relish.
5. Roll closed and cut in half on the bias.
