Savory spiced crêpes are served open faced in a bowl with a layer of bacon-infused Upstate Farms® Greek Nonfat Plain Yogurt. Bowls are topped with crispy hash browns and cheddar scrambled eggs with fresh chives.Serves: 4
1 cup Upstate Farms® Greek Nonfat Plain Yogurt
1⁄2 cup bacon, cooked and chopped
2 tbsp. salted butter
8 large eggs
2 cups hash browns, cooked and hot
1⁄4 cup chives, chopped
4 pre-made crêpes
1. Combine the Upstate Farms® Greek Nonfat Plain Yogurt and chopped bacon and set aside.
2. In a nonstick sauté? pan over medium heat, cook eggs by pulling, lifting and folding them until thickened and no visible liquid egg remains. Remove mixture from heat and set aside, keeping warm.
3. Place each crêpe in a bowl and layer with hash browns, eggs, yogurt mixture and chives. Serve immediately.
