Fluffy eggs rise to the occasion with Upstate Farms® Sour Cream, green chilies, onions, cilantro, white cheddar, and a Parmesan crust.Serves: 10
2 cups Upstate Farms® Sour Cream
1/2 bunch cilantro, finely chopped
3 tbsp. olive oil
1/2 cup green chilies, minced
1 small white onion, diced
1 1/2 cups shredded white cheddar cheese
2 cups grated Parmesan cheese
1. Preheat oven to 400° Fahrenheit.
2. In a large blender, crack eggs, then add Upstate Farms® Sour Cream and cilantro. Blend mixture for 15 seconds or until foamy.
3. In a large sauté pan over medium heat, heat oil and cook chilies and onions until soft. Pour in egg mixture. Using a rubber spatula, keep stirring the mixture until scrambled eggs start to form, but do not allow eggs to fully cook. Remove from heat.
4. In a greased round-hinged cake pan, pour in half of the mixture. Sprinkle in the white cheddar cheese, followed by the second half of the egg mixture. Completely cover the top layer with parmesan cheese and bake in oven for 35 minutes or until frittata is firm, and a tooth pick comes out dry from center. Allow to cool for 10 minutes before removing from cake pan.
