Green edamame is blended with Upstate Farms® Greek Nonfat Plain Yogurt, lemon, a touch of garlic, extra virgin olive oil, parsley, and tahini, and then served with colorful vegetables and baked naan.Serves: 10
1 1/2 cups Upstate Farms® Greek Nonfat Plain Yogurt
2 cups edamame
1/2 cup extra virgin olive oil
2 tbsp. chopped garlic
1/2 cup lemon juice
1/4 cup tahini
1/4 cup chopped parsley
Salt and pepper, to taste
1. In a food processor blend: Upstate Farms® Greek Nonfat Plain Yogurt, edamame, olive oil, garlic, lemon juice, tahini, and parsley for 4 to 5 minutes, until thoroughly puréed.
2. Season with salt and pepper and plate with vegetables and naan.
